How to audit a shared folder in 2K3

I would like to audit a shared folder on a 2K3 Standard SP1 file server. I want to audit file and folder moves and deletions. This file server uses a group policy currently which does not include auditing object access. This group policy applies to most of my 20+ servers.

So in order to setup group policy for just one shared folder on that one file server do I need to:
– Enable auditing for the groups listed in that shared folder
– Create a new group policy and apply it to only that one file server

Would this work? I really didn’t see any auditing settings for moves, but I did see options to audit deletions.
