I connect to my NAS using my Samsung Smart TV and it’s outdated. Showing stuff that I deleted and not showing stuff I put recently. After a while (maybe a couple of days), it updates but how do I fix it or refresh it? Thanks!

The media server has to index all media files in the folders and subfolders, you configured for the media server.
It might be an issue of the running version of media server you’re using.
So check for an updated version.
Or maybe, the database of the media server is corrupt and you have to reindex all files and folders of the media server.
